4 pints pale ale

1 level teaspoon freshly grated nutmeg

sugar to taste

3 eggs

½ pint whisky


 1. Pour the ale into a large pan, add the nutmeg and bring the liquid to just below boiling. Stir in enough sugar to taste

2. In a large bowl beat the eggs then very gradually stir in the hot ale. If the liquid is added too quickly the eggs will curdle

3. Stir in the whisky, then pour the liquid back into the pan. Stirring constantly, bring the drink back to just below boiling point, then pour back and forth from a height in warmed tankards until the drink froths and becomes clear and sparkling
