Kipper Pate Recipe from


8 oz kippers

1 level teaspoon anchovy essence

3 oz melted butter

salt and pepper

1 teaspoon single cream

¼ level teaspoon ground nutmeg


 1. Put the kippers into a pan of cold water. Slowly bring to the boil, simmer for one minute, then drain and remove all the bones and skin

2. Put the pieces of fish into a liquidizer with the anchovy essence, 2 oz of the melted butter, the cream, nutmeg and seasoning. Blend all these ingredients together to make a smooth consistency

3. Check for seasoning then turn into a small dish, smooth over the surface and pour the rest of the butter on top to form a seal. Serve with fresh toast
