Parkin Recipe from


4 oz butter

4 oz honey

4 oz dark soft brown sugar

1 large egg

4 oz self raising flour

4 oz medium oatmeal

1 level teaspoon ground ginger

1 level teaspoon ground cinnamon

6 tablespoons milk

6½ inch square tin, greased and base lined


 1. Melt the butter, honey and sugar together over a low heat. Leave to cool

2. Sift the flour, ginger and cinnamon into a bowl, stir in the oatmeal and add he melted mixture with the egg, well beaten, and the milk

3. Pour the mixture into the tin then bake at gas 3 / 325°F / 160°C for 1¼ hours or until the cake feels springy to the touch and is lightly shrinking away from the sides of the tin

4. Turn the parkin onto a wire tray to cool then store it for one day at least before serving it sliced and buttered
